Bakery Utensils Cleaning
Cleaning bakery utensils is not just about soaking them in water, scrubbing them, and rinsing them. Remember, the kitchen Stewarding Department holds the health and safety of the diners so, of course, there is more to it than just a simple washing.
Here is a simple guideline that kitchen stewards should follow.
Moulds are commonly used, and it will happen that there will be leftover food clinging to the sides and the bottom. For this reason, the kitchen steward has to soak the moulds under hot water for about a couple of hours to three hours. Detergent should be added to the water to help loosen up the debris, and the required water to ratio is 1 liter of water to 250 ml of detergent.
After soaking them, the kitchen steward has to make use of a scrubbing pad to thoroughly scrub the moulds. He has to make sure that all surfaces are scrubbed free of food particles.
Once done, he can then rinse the moulds with hot water thoroughly to ensure that all traces of detergent are removed. Then transfer them and arrange them inside the appropriate storage rack. Remember, always stack them upside down so dust will not collect inside the moulds.
The same is also done if the kitchen steward is to use the dishwashing machine. All food particles should be scraped off so that it will not clog the drains. Load the moulds properly inside the dishwashing machine, making sure not to overload the machine. Care should also be taken that the machine is not improperly loaded as this can cause damage to the machine. Improper loading or overloading will result to infective cleaning of the mould, the result of which can be hazardous to the health of the diners.
You will notice that a baking utensil is not washed thoroughly if grease is still present or there are still some food particles clinging to it. For this reason, the abovementioned steps should be done once more. However, care should be taken that this will not happen because not only will you waste precious cleaning agents and water, but you will also waste time and effort.
A note to remember though. Do not wipe the clean moulds off with a towel, even if the towel itself is clean. Instead allow it to dry by itself so as to prevent contamination of the moulds.
There are also different types of moulds though, so be sure that you know how to appropriately clean them. There are non-stick baking moulds, and for this type of moulds, never use an abrasive sponge in scrubbing them. Not only will you damage the integrity of the mould, but this can also cause uneven baking, thus, resulting to more waste. The same is also true when you are washing metal moulds. Abrasive sponges can cause scratches which can damage it.
As for glass moulds and those that do not have non-stick surfaces, they can simply be washed via the dishwashing machine or by hand.
